Belgian Waffle Recipe??

    My wife just walked into my office and reminded me that since we absolutely loved the freshly made Belgian waffles that we purchased while walking along the beautiful streets of Ghent at the podiatry seminar last week, we wanted to get a good recipe by which to make Belgian Waffles here in California. My stomach thanks you in advance for the culinary advice! Here is a chance for the Joris, Ken, Kerstin, Inga, Bart and others to contribute to something vitally important for the podiatry profession!! :D :)

    Hi there,
    Belgian Waffles are a staple 'afters' for dinner parties at my place. Don't forget the homemade icecream and the caramel sauce.
    The more oil you add, the crispier they get without the 'body' and vice versa. Also a souring agent like cultured buttermilk, non fat yoghurt, or a tablespoon of vinegar in your milk and leave to sit for five minutes till it reaches it's isoelectric point (curdles) makes any baked item crispy on the outside.
    Here is a production line version of a traditional yeast rise one...
    And this little baby is the one I use each and every time.

    Thanks for the recipe and ideas. I think that at least of the Belgian podiatrists should submit one of their recipes.....I mean they do call them Belgian waffles!! :)

    Brussels Waffles (Belgian)

    Ingredients
    Serving: 6

    - 600 g ( 1lb 5oz ) self-raising flour
    - 400 g ( 14oz ) sugar
    - 400 g ( 14oz ) butter
    - 8 eggs
    - 4 packets of vanilla sugar

    To prepare
    Heat the waffle-maker well. Mix the flour, sugar, butter, eggs and vanilla sugar well to a smooth consistency. Butter the waffle-maker and bake.

    Serve with icing sugar, a scoop of ice-cream, whipped cream, hot chocolate

    Hey Kevin.

    We did not forget you but we had to look for our recipes ...
    Somewere on the attic ...

    Comming up, straight from “our grandmothers” cooking archive.

    For 20 waffles :

    500 gr flour
    A bit of salt
    Half a spoon of backing powder
    300 gr fine, white sugar
    20 gr of vanilla sugar
    25 gr vanilla powder
    400 gr butter
    6 eggs

    Take the flour, salt, backing powder, the sugar, vanilla sugar and vanilla powder in a big bowl, mix it, and make a small hole.
    Melt the butter, stir the eggs and pour this into the little hole.
    Start mixing the ingredients until you get a smooth paste.
    Let it rest for 2-3 hours.
    Heat the waffle-maker well and start backing.


    Enjoy it guys.

    I just checked the June stats for Podiatry Arena; 34 people came to Podiatry Arena via Google looking for "waffle recipe" ... they found this thread! Another 13 found it by searching for "belgian waffle recipe".

    The waffles we made from the recipe didn't quite taste like the ones we had in Ghent. Thinking about it makes me want to go back again for their waffles.....and their beer!!

    I suppose 3 legs is better to stand on then 1 after a couple of cold ones... ;-) But as I recall well, the one-legged Dog Handshake was pretty challenging!;)
    I'll keep your offer in mind Kevin!
